Wild Flour Vermont Bakery is a small bakery owned and operated by Patricia Austin. Born in Vermont, Patricia began her great love of baking as a young child in a busy family kitchen helping her father bake donuts and pies. At age 10 she had an insightful piano recital when all the compliments came in the form of parents asking for the recipe of the cookies she had baked for the reception. When she was 17 years old she held her first bakery job at Baguette French Bread as a croissant maker - mixing, pounding, folding and gently rolling hundreds of croissants by hand - a great meditation in patience, physical endurance and commitment to baking. In the early 1980's she worked as pastry chef assistant to Jeffrey Hamelman at his Bakery in Brattleboro, Vermont. This experience introduced a new and extensive European style of baking which greatly influenced Patricia's passion for the art of baking. In 1989-96 she co-owned and operated the lovely Bread Tree Bakery in Keene, NH where she produced an extensive line of pastries and desserts while enjoying the company of the community. Patricia also operated Diamond Cow Desserts, a small bakery serving the Brattleboro, VT area for nearly a decade. To further develop her skills, Patricia took a research journey to France where she visited over 100 Pâtisseries to learn about French pastry and it's complexities of design, flavor, texture and presentation. Wild Flour Vermont Bakery is the blossoming of years of baking, recipe development and the integration of Patricia's related interests of living a life connected to the land, all living creatures and community. In her garden, Patricia grows a variety of edible flowers that are used for baking and decorating; raises honeybees whose honey compliments the Florentine Sablés and beeswax brush the copper Cannelé molds; and tends her Rhode Island Red Hens who produce organic eggs for her products. All of Patricia's baking is hand made from scratch, including the labor intensive croissants, danish, and puff pastries. She sells her products at the Brattleboro Area Farmers' Market and POS Winter Farmers' Market. Patricia's desserts are also available at T.J. Buckley's Restaurant in Brattleboro, or by placing special orders locally or online. |
